The Oyster

Oysters have been present on this globe for over 250 million years and there are many genera and species. Naturally occurs in Europe and the European flat oyster Ostrea edulis. They have a very large habitat that stretches along the coasts of the Northeast Atlantic Ocean - from mid-Norway to Morocco - as well as in the Mediterranean and Black Seas. Considered a delicacy, the flat oyster has in the past been either deliberately released into the wild in many places around the world or cultivated for aquaculture purposes in various locations outside of northwestern Europe. For example, the species was deliberately released into the wild on the east coast of North America in the second half of the 20th century. Naturally overgrown populations of Ostrea edulis are also present in South Africa, Japan and Australia. Flat oysters are found in estuaries, bays and lagoons and in the open sea. They live in shallow waters to a depth of 10 to 20 meters. Flat oysters live in the coastal zone up to the limit where the water recedes at low tide ... Are you looking for pearls ??? Unfortunately for them, but the beautiful white pearls are only made by the pearl oysters. These tropical oysters belong to the Pteriidae family and you will have to look for them in more tropical places. In Zeeland oysters come in two types: the 'Zeeland flat' and the 'Zeeuwse bolle', or 'creuse'. They are both grown in the Grevelingen and the Oosterschelde. The difference between the two types is that the 'Zeeland flat' is only good for consumption after about six years, while the 'Zeeuwse bolle' can be eaten after two years. That makes the 'Zeeland flat' more scarce and, according to experts, also more refined in taste ... That is why at The Perfect Serve Agency we always look for the 'gems' in products. Oester zijn al meer dan 250 miljoen jaar aanwezig op deze aardbol en er bestaan heel wat genera en soorten. Van nature komt in Europa en de Europese platte oester Ostrea edulis voor. Ze hebben een zeer groot leefgebied dat zich uitstrekt langs de kusten van de Noordoost- Atlantische Oceaan – van halverwege Noorwegen tot Marokko – alsook in de Middellandse en Zwarte Zee.

Omdat de platte oester beschouwd wordt als een ware lekkernij, is deze soort in het verleden op vele plaatsen ter wereld doelbewust in het wild uitgezet of voor aquacultuurdoeleinden op diverse locaties buiten Noordwest-Europa gekweekt.

Zo werd de soort bijvoorbeeld in de tweede helft van de 20ste eeuw bewust in het wild uitgezet aan de oostkust van Noord-Amerika.

Ook in Zuid-Afrika, Japan en Australië zijn natuurlijk uit- gegroeide populaties van Ostrea edulis aanwezig.

Platte oesters komen voor in estuaria, baaien en lagunes en in open zee. Ze leven in ondiepe wateren tot op 10 à 20 meter diepte. Platte oesters leven in de kustzone tot op de grens waar het water zich terugtrekt bij laag water...

Ben je dus op zoek naar parels???

Helaas voor hen, maar de mooie witte parels worden alleen gemaakt door de pareloesters. Deze tropische oesters behoren tot de familie Pteriidae en zal je bij deze in meer tropische oorden moeten gaan zoeken.

In Zeeland komen de oesters voor in twee soorten: de 'Zeeuwse platte' en de 'Zeeuwse bolle', ofwel de ‘creuse’. Beide worden ze gekweekt in de Grevelingen en de Oosterschelde. Het verschil tussen beide soorten is dat de 'Zeeuwse platte' pas na ongeveer zes jaar goed is voor consumptie, terwijl de 'Zeeuwse bolle' al na twee jaar gegeten kan worden. Dat maakt de 'Zeeuwse platte' schaarser en volgens kenners ook verfijnder van smaak...

Daarom gaan we bij The Perfect Serve Agency altijd naar de ‘pareltjes’ opzoek in producten.

Met een goed gevuld hoofd vol met informatie, trekken we zo ook met onze smaak combinaties naar de gasten. Let's start with 1 of the oldest cocktails in existence 😋 “The Old Fashioned Cocktail” Also 1 of The Perfect Serve Agency Favorite cocktails !! Our story begins with Jerry Thomas and one of the oldest handwritten Bar-Tenders Guide found from ... 1862 ✔️ In 1862 Jerry Thomas shook the Old fashioned cocktail with Whiskey ... Which was most likely, after the prohibition, a mix of Rye whiskey and a kind of “bourbon” that was still in full evolution. Over the years, purists have started speculating about how the Old Fashioned should be drunk ... Let's face it, with a bourbon that would make for a softer and slightly sweeter old fashioned or with a Rye whiskey that would make for more Kick and seasoning in the Old Fashioned, you tell me ...? We at The Perfect Serve Agency prefer to go for more different flavors here, so that everyone can find their own taste in a powerful cocktail like the Old Fashioned. Where does the name actually come from, you wonder? The full name was then: "The Old Fashioned Whiskey Cocktail" (1862) Before that all the way back for this time, really in the very beginning of the cocktail time + - 1806 when there were recipes that still contained the ingredients: Spirit-a small little sugar-water and bitters! In this time it was still simply called a Whiskey Cocktail, no more, no less. (Fun fact) This cocktail was still served without ice, and was then considered to be a cocktail for adults. Over the years this cocktail has made a rollercoaster, people claiming that they invented or improved it and so on. Which brings us somewhere in the mid 1990s and so this cocktail became popular in London but no longer shaked like in the 1862 but “stirred” In the glass or in a mixed glass? Just name it ... We stir these to get a dilution or rather called in “bartender terminology” DILUTION To be obtained! Or as in the pictures in Caviar balls. Cocktail caviar balls you say ... Indeed as a molecular mixologist ... I would like to say that this cocktail is really evolving. Bartenders have now perfected these so that there is sure to be something for everyone. How to make? I give you my favorite .. I am a big fan of rum and chocolate ☺️ For me this is just a match made in heaven 😋 Recipe for the Chocolate rum old Fashioned as in the picture: - 50Ml Your Favorite Rum infused in a chocolate bottle. 'We call this chocolate wash' (For more information you can always contact me) - 1 spoon of sugar or 10 ML of sugar syrup. - 6 Drops of Chocolate / Chili Bitters - A little bit of sparkling water (Matter that your sugar dissolves nicely) Like the sugar syrup, it should also be 10 ml otherwise you have more water to dilute ... Small tip! For a fruit salad version of this one you can share zest with the sugar for the fans 😋🇧🇪 Enjoy it and hopefully I taught you something again today ☺️✔️

Ook meteen 1 van The Perfect Serve Agency Favoriete cocktails!!

Ons verhaal begint bij Jerry Thomas en nog 1 van de oudst gevonden handgeschreven Bar-Tenders Guide uit... 1862 ✔️

In 1862 shakte Jerry Thomas de Old fashioned cocktail met Whiskey... Wat toen hoogst waarschijnlijk, na de prohibition een mix was van Rogge whiskey en een soort van “bourbon” die nog in de volle evolutie zat.

Gedurende de jaren zijn puristen beginnen speculeren over hoe de Old Fashioned zou moeten gedronken worden... Laat ons eerlijk zijn, met een bourbon dat wat voor een zachtere en iets zoetere old fashioned zou zorgen of met een Rogge whiskey wat dan weer voor meer Kick en kruiding zorgt in de Old Fashioned zegt u het mij maar...? Wij bij The Perfect Serve Agency gaan hier liever voor meer verschillende smaken, zo dat iedereen zijn eigen smaak vind in een krachtige cocktail als de Old Fashioned.

Waar komt de naam eigenlijk vandaan, vraagt u zich af??

De volledige naam was toen:

“ The Old Fashioned Whiskey Cocktail “ (1862)

Daarvoor helemaal terug voor deze tijd, echt in het prille begin van de cocktail tijd +- 1806 toen er nog recepten waren die nog de ingrediënten bevatte: Spirit-een klein beetje suiker-water en bitters! In deze tijd was het nog simpel een Whiskey Cocktail genaamd, niet meer en niet minder.

(Leuk weetje)

Werd deze cocktail wel nog geserveerd zonder ijs, en werd toen zo beschouwt als een cocktail voor volwassenen.

Door de jaren heen heeft deze cocktail een rollercoaster gemaakt, mensen die claimde dat zij deze hadden uitgevonden of verbeterd en enzovoort.. Wat ons brengt ergens midden 1990 enzo ook deze cocktail populair geworden is in Londen maar dan niet meer geshaket als in de jaren 1862 maar ge -

“stirred” In het glas of in een mix glas? Zegt u het maar... Wij stirren deze voor een verwatering te krijgen of beter genoemd in “bartender terminologie” DILUTION Te verkrijgen!

Of zoals op de foto’s in Kaviaar ballen. Cocktail kaviaar ballen zegt u...

Inderdaad als moleculaire mixologist... Geef ik graag mee dat deze cocktail echt aan evolutie bezig is.

Bartenders nu hebben deze zodanig geperfectioneerd dat er zeker voor elk wat wils is.

Hoe te maken? Ik geef je mijn favorite mee..

Ik ben een grote fan van rum en chocolade ☺️

Voor mij is dit gewoon een match made in heaven 😋

Recept voor de Chocolade rum old Fashioned zoals op de foto:

- 50Ml Jouw Favoriete Rum geinfusseerd in een chocolade fles. ‘Chocolade wash noemen we dit’

( Voor meer uitleg mag je mij altijd contacteren)

- 1 lepel suiker of 10 ML Suiker siroop.

- 6 Druppels Chocolade/Chili Bitters

- Een klein beetje bruiswater ( Kwestie dat uw suiker mooi oplost ) Zoals de suiker siroop zou het ook een 10tal Ml moeten zijn anders heb je al een meer aan verwatering... Kleine tip!

Voor een fruitsalade versie van deze kan je zest muddelen met de suiker voor de fans 😋🇧🇪
